Mixed mushroom tart Recipe (Vegetarian)

Delicious, healthy and versatile, mushrooms are the star ingredient in this simple savoury tart.

Serves: 4
Time to prep: 15 minutes
Time to cook: 25 minutes

Ingredients
  • 2 sheets frozen butter puff pastry, partially thawed
  • 1 egg, lightly beaten
  • 1 tablespoon olive oil
  • 20g butter
  • 4 eschalots, finely sliced
  • 1 garlic clove, thinly sliced
  • 200g button mushrooms, quartered
  • 200g cup mushrooms, sliced
  • 1 tablespoon fresh thyme leaves
  • 50g feta cheese, crumbled
  • Fresh thyme leaves and salad leaves, to serve

Method
  • Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper. Layer pastry sheets on prepared tray. Press to seal. Using a sharp knife, score 1.5cm border around pastry (don't cut all the way through). Prick centre with a fork. Brush with egg. Bake for 10 minutes or until light golden and puffed.
  • Meanwhile, heat oil and butter in a saucepan over medium-high heat. Add eschalots and garlic. Cook, stirring, for 2 minutes or until fragrant. Add mushroom and thyme. Season with salt and pepper. Cook, stirring, for 6 to 8 minutes or until mushroom is just tender and liquid has almost evaporated. Remove from heat.
  • Using a slotted spoon, transfer mushroom mixture to centre of pastry. Top with feta. Bake for 15 minutes or until golden and puffed. Stand for 2 minutes. Sprinkle with thyme. Serve with salad.

Reduced-fat hummingbird cake Recipe

We've tweaked your favourite cafe cake for minimum guilt and maximum flavour!

Serves: 10
Time to prep: 15 minutes
Time to cook: 50 minutes

Ingredients
  • 2 cups self-raising flour
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon mixed spice
  • 1 cup firmly packed brown sugar
  • 2 eggs, lightly beaten
  • 1 cup mashed banana
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 440g can crushed pineapple in natural juice, undrained
  • 1/2 cup chopped walnuts
  • 2 tablespoons flaked coconut
Cream cheese icing
  • 80g extra-light cream cheese
  • 30g reduced-fat margarine spread
  • 1 teaspoon vanilla extract
  • 1 cup icing sugar mixture

Method
  • Preheat oven to 180°C/160°C fan-forced. Grease a 6cm-deep, 22cm (base) round cake pan. Line base and side with baking paper.
  • Sift flour, bicarbonate of soda and mixed spice into a bowl. Add sugar. Using a large metal spoon, stir to combine. Stir in eggs, banana, oil, vanilla, pineapple and two-thirds of the walnuts.
  • Pour batter into prepared pan. Bake for 45 minutes or until a skewer inserted in centre comes out clean. Cool in pan for 5 minutes. Turn onto a wire rack to cool completely.
  • Make icing Using an electric mixer, beat cream cheese, spread, vanilla and icing sugar mixture until smooth. Spread icing over cake top. Sprinkle with coconut and remaining walnuts. Serve.

Creche Date Night - Extended!


 Dinky Dolphins parents can spend some lovin’ time together by enjoying dinner whilst your munchkins are looked after by us! 
Parents Date Night is now extended!
(From 5pm to 7.30pm Monday to Thursday Evenings.) 
You’ll need to register your child/children at Dinky Dolphins Crèche in advance. You can then simply drop them off and treat yourself to dinner at our Leagues Club Bistro, Koopa Café or our One Eyed Dolphin (there’s a great special on Wednesday & Thursday nights!) 

Times and age requirements vary so bookings are essential.

Tandoori chicken drumsticks Recipe

Curry for kids: Warm them up gently with this low-heat, kid-friendly chicken curry.

Serves: 4
Time to prep: 1 hour
Time to cook: 30 minutes

Ingredients
  • 1/4 cup tandoori paste
  • 3 teaspoons lemon juice
  • 1/2 cup plain yoghurt
  • 8 large (1.3kg) chicken drumsticks
  • 1 garlic clove, crushed
  • 1/4 teaspoon ground cumin
  • 1/2 small Lebanese cucumber, chopped
  • 1 cup firmly packed baby spinach
  • Steamed basmati rice, to serve

Method
  • Combine tandoori paste, 2 teaspoons lemon juice and 2 tablespoons yoghurt in a large bowl. Add drumsticks. Toss to coat. Cover. Refrigerate for 2 hours or overnight, if time permits.
  • Combine garlic, cumin, cucumber, remaining lemon juice and remaining yoghurt in a bowl. Cover. Refrigerate.
  • Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper. Heat a greased barbecue plate or chargrill on medium-high heat. Cook drumsticks for 5 minutes each side or until browned. Transfer to prepared tray. Bake, covered, for 20 to 30 minutes or until cooked through.
  • Spoon rice into bowls. Top with drumsticks. Add spinach to baking tray. Toss to coat in juices. Top drumsticks with spinach mixture and remaining tray juices. Serve with yoghurt mixture.

Roast capsicum hommus Recipe

You may not be a master chef, but you still like to entertain. Here's a foolproof, easy-to-make recipe that's set to impress and fire up your inner cook!

Time to prep: 10 minutes

Ingredients
  • 400g can chickpeas, drained, rinsed
  • 1 1/2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 garlic clove, quartered
  • 1/2 cup chopped chargrilled capsicum
  • 2 tablespoons olive oil

Method
  • Process chickpeas, tahini, lemon juice, garlic and capsicum until almost smooth. Season with salt and pepper. Add oil and 1 tablespoon cold water. Process until combined. Serve with herb and salt crisps (see related recipe).

Dolphins Swim Club


Friday night is FUN night at DHP. It offers swimmers the chance to compete and improve their personal best times as well as offering an environment for families to meet and socialise. The yummy BBQ is a great excuse for you have a night off cooking duties while watching your little champs having fun.

When: First Friday of the month
Time: Races from 6.00pm
Cost: $5/student (includes races and sausage sizzle)
First club night for 2014: 7th February

Club Nights are open to past and present LTS families of DHP. The event commences at 6pm sharp and are finished by 7.30pm. A Club BBQ will be on during this time.

PT Ryan's New Class


Look out for DHP Personal Trainer Ryan Andrews, who is now delivering the Wednesday 5.45am boxing based class.

Ryan is MMA trained, Black belt in Tae Kwon Do and will work on technique as well as fitness.
