Honey and mustard roasted chicken drumsticks Recipe

Here is a healthy, budget-friendly recipe for the whole family to enjoy.

Serves: 4
Time to prep: 20 minutes
Time to cook: 40 minutes

Ingredients:
  • 2 tablespoons extra-light olive oil
  • 1/4 cup honey
  • 1 tablespoon wholegrain mustard
  • 1 orange, juiced
  • 12 chicken drumsticks
  • 450g orange sweet potato, peeled, cut into 2cm pieces
  • 450g desiree potatoes, peeled, cut into 2cm pieces
  • 100g baby spinach leaves

Method
  • Preheat oven to 240°C. Combine 1 tablespoon of oil, honey, mustard and 2 to 3 tablespoons of orange juice in a large baking dish. Add chicken and turn to coat.
  • Combine remaining oil, sweet potatoes and potatoes in a large, non-stick roasting pan. Season with salt and pepper. Toss until well combined.
  • Place potatoes on top shelf of oven. Roast, turning occasionally, for 20 minutes. Place chicken on lower shelf of oven. Roast, basting occasionally, for 20 minutes.
  • Swap pans around in oven. Roast potatoes and chicken for a further 20 minutes or until potatoes are golden and tender and chicken is cooked through.
  • Reserve 4 drumsticks (see tip) for related recipe. Divide the potatoes and spinach between serving plates. Top each with 2 of the remaining drumsticks. Serve.

Honey-roast Carrot Salad with Paprika-spiced Fish

The sweet honey-roasted carrot pairs perfectly with the smoky Middle-Eastern flavours of this spiced fish recipe.

Time to prepare: 10 minutes
Time to cook: 20 minutes
Serves: 4

Ingredients
  • 4 carrots, peeled, sliced diagonally
  • 2 tbs honey
  • 1 tsp caraway seeds
  • 2 tbs olive oil
  • 4 (about 130g each) white fish fillets (see note)
  • 1 tsp sweet paprika
  • 1 tbs lemon juice
  • 1 bunch flat-leaf parsley, leaves picked
  • 1/2 red onion, thinly sliced
  • 100g feta, crumbled

Method
  • Preheat oven to 180°C. Line an oven tray with baking paper. Place carrot on tray and drizzle with half the honey. Sprinkle with caraway and season with salt and pepper. Bake, turning occasionally, for 15 minutes until tender and golden. Remove from oven and set aside for 5 minutes.
  • Heat 1 teaspoon of oil in a frying pan over high heat. Sprinkle fish with half the paprika. Season with salt and pepper. Cook for 1-2 minutes each side or until golden and cooked through.
  • Combine lemon juice, remaining honey, oil and paprika in a screw-top jar and shake until well combined. Taste and season.
  • Place carrot, parsley, onion and feta in a bowl. Drizzle with dressing and gently toss. Serve salad with fish immediately.

Delicious Wholemeal Banana Pancakes Recipe


Wholemeal banana pancakes topped with honey and sliced banana makes a blissful weekend (or weekday) breakfast!

Ingredients (serves 4)
  • 2 large bananas
  • 1 1/2 cups wholemeal self-raising flour
  • 1 1/2 cups buttermilk
  • 2 eggs, lightly beaten
  • 1 tablespoon honey
  • Olive oil cooking spray
  • Honey and reduced-fat passionfruit yoghurt, to serve

Method
  • Mash 1 banana in a bowl. Place flour in the a bowl. Make a well in the centre. Combine buttermilk, eggs, honey and mashed banana in a jug. Pour into well. Whisk until smooth. Stand for 10 minutes.
  • Spray a large, non-stick frying pan with oil. Heat over medium heat. Spoon 1/4 cup batter into pan. Cook for 2 to 3 minutes or until bubbles appear on the surface. Turn. Cook for 1 to 2 minutes or until golden and cooked through. Transfer to a plate. Cover to keep warm. Repeat with remaining batter to make 12 pancakes.
  • Thinly slice remaining banana. Place pancakes on plates. Top with sliced banana, honey and yoghurt. Serve and enjoy...
